0.21 ha for the "Vignes franches", A very small, walled parcel of vines formely owned by the Hospices de Beaune.

0.33 ha for the "Aux coucherias".

 

The parcels are located at 1 km from Beaune, south-facing.

 

Clay-limestone on calcareous, almost unfissured bedrock.

 

Traditional low-trained vines, 10 000 plants/ha.

 

Manual.

 

Long fermentation, with up to 25 days in wooden vats. Aged in oak barrels for 12 months, with only 10% of new oak.

 

Very moderate.

 

 

Wine for keeping that allies finesse and strong structure, to be aged for ten years or more in cellar.

With elaborate dishes of meats in rich sauces or with cheese.

14 to 16°C.
